Quick Meals- Salads and Sandwiches :: Vegetarian Sandwiches
2 eggs, slightly beaten
1/2 tsp. salt
1/2 C. milk
12 slices bread
1/2 C. smooth peanut butter
1/4 C. shortening
Jelly
Mix together eggs, salt and milk. Spread 6 slices of bread with peanut butter. Top with remaining slices of bread and cut in half diagonally. Dip sandwiches in egg mixture and fry on preheated, well-greased griddle until golden brown on both sides.
Serve hot with jelly.
