Quick Meals- Salads and Vegetarian Dishes :: Vegetarian Entrees
3 C. shredded zucchini
1 C. cooked brown rice
1 C. wheat germ
1 1/4 C. shredded cheese
1 C. walnuts, chopped
2 C. sliced fresh mushrooms
4 scallions, sliced
4 eggs
3 garlic cloves, minced
1/2 tsp. sage
1/2 tsp. salt
1/4 tsp. pepper
Mix all the ingredients, using 1 C. of the shredded cheese. Put all into a greased 9 x 5-in. bread loaf pan. Sprinkle with 1/4 C. shredded cheese. Bake for 50 min. at 375 degrees F.
