Quick Meals- Salads and Vegetarian Dishes :: Vegetarian Entrees
1 1/2 lb. zucchini
3/4 C. chopped parsley
Juice of 1 lemon
1 C. cottage cheese
1 tsp. salt
Pin. of pepper
1 tsp. basil
2 Tbsp. oil
2 C. cooked brown rice
1/2 C. Cheddar cheese, grated
2 Tbsp. Parmesan cheese
Steam 1/4-in. rounds of unpeeled zucchini until done, but firm.
Preheat oven to 350 degrees F.
Mix rice with lemon juice, parsley and seasonings. In a greased casserole, make a layer each of rice mixture, cottage cheese and zucchini. Top with grated cheese. Bake uncovered for 15 min. Sprinkle with Parmesan cheese.
