Quick Meals- Salads and Vegetarian Dishes :: Vegetarian Entrees
Servings 4.
1 C. cooked brown rice
1 C. carrot, grated
1 C. onion, chopped finely
1 stalk celery, chopped finely
1 tsp. garlic, minced
1 Tbsp. fresh parsley, minced
3 eggs, beaten
1/2 C. whole wheat flour
1/3 C. oats
1/3 C. ground walnuts
1/4 C. grated Cheddar cheese
1 Tbsp. cumin
1 tsp. sea salt
1 Tbsp. basil
Mix all ingredients together. Make into patties and cook on greased baking sheet for 20 min. at 350 degrees F or grill over med. high heat for about 5 min. each side. You may also cook on the stovetop in a skillet coated lightly with cooking spray.
Options: Serve with sliced tomato, onions, lettuce and mustard.
