Quick Meals- Salads and Vegetarian Dishes :: Vegetarian Entrees
12 oz. tofu
1/2 C. cooked brown rice or bulgur wheat
1/4 C. peanuts
1/2 C. green bell pepper, diced
2 cloves garlic, crushed
1/4 tsp. chili powder
1/4 C. catsup
1/2 tsp. salt
2 to 3 Tbsp. canola oil
6 tortillas
Taco sauce
Garnishes
Chopped tomato
Minced onion
Shredded lettuce
Mix together tofu, rice, peanuts, green bell pepper, garlic, chili powder, ketchup and salt in a lrg. bowl; mash thoroughly.
Heat the oil in a skillet and fry the tortillas. Top each tortilla with your choice of garnishes. Spoon on the tofu mixture and season with taco sauce.
