Creamy Cheese Enchiladas


6 flour tortillas
3 C. shredded Monterey jack cheese
6 Tbsp. chopped scallions


Fill each tortilla with 1/2 C. cheese and 1 Tbsp. scallion. Roll each and place in an 8-in. square dish.


Melt 1/4 C. butter. Add 1/4 C. flour. Stir in 2 C. chicken broth until thick. Remove from heat and add 1 C. sour cream, 1 (4 oz.) can green chiles, seeded and chopped. Pour over the tortillas. Bake at 350 degrees F for 20 min.
