Quick Meals- Salads and Vegetarian Dishes :: Vegetarian Desserts
Yield: 8 servings
2 C. semisweet chocolate chips
1/3 C. coffee liqueur
1 block silken tofu
1 tsp. vanilla extract or flavoring
1 Tbsp. honey
1 prepared chocolate wafer crust
Place a sm. metal bowl over a saucepan with simmering water. Melt the chocolate and coffee liqueur in the bowl. Stir in vanilla extract or flavoring.
Mix together the tofu, chocolate mixture and honey in a blender container. Liquefy until smooth. Pour the filling into the crust and refrigerate for two hr. or until filling is set.
