Recipe for cooking frozen raspberry tofu

Frozen Raspberry Tofu


1 (12 oz.) bag frozen raspberries (unthawed)
1 C. drained soft tofu
1 tsp. vanilla extract or flavoring
3 Tbsp. sugar, divided


In food processor Mix together raspberries straight from the freezer, tofu, vanilla extract or flavoring, and 1 Tbsp. of the sugar. Process until pureed and well blended, scraping down the sides if needed. Taste and add additional sugar if needed.


Serve immediately in stemmed glasses or dessert dishes.
