Quick Meals- Salads and Vegetarian Dishes :: Vegetarian Desserts
2 (10.5 oz.) pkg.s lite firm tofu
16 oz. vanilla soymilk or rice milk
1/4 vanilla bean, split
1/4 C. sugar
2 Tbsp. grated piloncillo (unrefined brown sugar cones)
or use brown sugar
1/4 tsp. ground turmeric
1/2 to 1 C. rum or brandy (optional)
Nutmeg
In a blender or food processor, Mix together all ingredients except nutmeg; blend thoroughly, stopping occasionally to scrape down sides of bowl.
Serve well-chilled and dusted with nutmeg.
Makes approximately 8 (5 oz.) servings.
