Cuban Black Bean Soup (Sopa de Frijol Negro)


1 C. chopped onion
3 cloves garlic, chopped finely
2 Tbsp. canola oil
1 lb. (2 2/3 C.) dried black beans
3 C. beef broth
3 C. water
1 C. chopped finely fully cooked smoked ham
1 C. chopped green bell pepper
1 lrg. tomato, chopped
1/4 C. dark rum
1 1/2 tsp. ground cumin
1 1/2 tsp. dried oregano leaves
Chopped hardboiled eggs
Chopped scallions


Cook 1 C. onion and the garlic in oil in Dutch oven until tender. Add remaining ingredients except chopped eggs and scallions. Heat to boiling; boil 2 min. Reduce heat; cover and simmer until beans are tender, about 2 hr.. Serve with chopped eggs and chopped scallions.
