Soups for Salads :: Vegetable Soups
2 Tbsp. minced onion
3 Tbsp. butter
3 Tbsp. flour
1 1/4 tsp. salt
Salt and pepper
3 C. chicken broth
2 C. chopped broccoli
2 C. diced carrots
3 C. milk
Saut onion in butter until tender. Stir in flour and salt. Add broth, broccoli and carrots. Heat over low heat for 25 min., stirring occasionally. DO NOT boil. Add salt and pepper.
Makes approximately 2 qt..
