Quick Meals- Soups and Bread :: Sweet Quick Breads
2 C. flour
2/3 C. sugar
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
1/4 tsp. ground cloves
2 Tbsp. softened butter
1 (16 oz.) can (2 C.) sliced peaches or
apricot halves, drained (reserve syrup)
1/2 C. reserved syrup
2 eggs
1 C. chopped nuts
1 C. raisins (optional)
Preheat oven to 350 degrees F. Using solid shortening, generously grease and flour a 9 x 5-in. or 8 x 4-in. bread loaf pan.
Lightly spoon flour into measuring C.; level off.
In lrg. bowl, blend ingredients at low speed until moistened. Beat for 2 min. at med. speed. Stir nuts into batter. Pour into prepared pan. Bake 60 to 70 min. until a wooden pick inserted in center comes out clean.
Immediately remove from pan; cool completely. If desired, drizzle with powdered\", sugar glaze. Store tightly wrapped in refrigerator.
