Recipe for cooking butterscotch banana bread

Butterscotch Banana Bread


3 1/2 C. flour
4 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. salt
1 1/2 C. sugar
4 to 6 ripe bananas, mashed
2 eggs
1/2 C. butter, melted
1/2 C. milk
2 2/3 C. pecans, divided
12 oz. butterscotch morsels


Preheat oven to 350 degrees F.

Mix together flour, baking powder, baking soda, cinnamon, nutmeg, salt and sugar. Set aside.


Mix together bananas, eggs, butter, milk, 2 C. of the pecans and the butterscotch morsels. Mix together with dry ingredients. Pour into two greased and floured bread loaf pans. Sprinkle the tops of loaves with the remaining 2/3 C. pecans. Bake for 60 to 70 min.


Cool in pans for 15 min., then remove from pans.
