Quick Meals- Soups and Bread :: Sweet Quick Breads
1 pint blueberries, rinsed but not dried off
3 C. plus 3 Tbsp. whole wheat flour, divided
2 C. sugar
1 C. chopped pecans
1/2 C. canola oil
4 eggs
1 tsp. baking soda
1 tsp. ground cinnamon
1 tsp. salt
Preheat the oven to 350 degrees F. Grease and flour two 9 x 5-in. bread loaf pans.
In a med. bowl, Mix together the blueberries and 3 Tbsp. flour. Toss to coat evenly.
In a lrg. bowl, Mix together the remaining ingredients. Mix well. Carefully fold in the blueberries.
Spoon the batter into the prepared bread loaf pans. Bake for 55 to 60 min. or until a wooden pick inserted into the center comes out clean.
Allow to cool slightly and then remove to a wire rack to cool completely.
