Quick Meals- Soups and Bread :: Sweet Quick Breads
A quick-bread recipe especially suited to breakfast; make it the night before for best flavor.
Servings 8 (1 loaf)
1 1/2 C. flour
1 C. whole wheat flour
1/2 C. natural bran cereal
1 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. ground ginger
1 1/3 C. buttermilk
3/4 C. sugar
1/4 C. canola oil
1 lrg. egg
1 tsp. grated orange zest
2 Gala or Golden Delicious apples, cored and chopped
Heat oven to 350 degrees F. Grease a 9 x 5-in. bread loaf pan.
In med. bowl, Mix together both flours, the bran cereal, baking soda, baking powder, and ginger.
In lrg. bowl, beat buttermilk, sugar, canola oil, egg and orange zest.
Add flour mixture to buttermilk mixture, stirring just until Mix togetherd. Fold in apples. Spread batter in prepared pan and bake 45 to 50 min. or until wooden pick inserted in center comes out clean. Cool bread in pan 10 min. Cool completely before servings.
