Quick Meals- Soups and Bread :: Sweet Quick Breads
1/2 C. butter or butter replacement, softened
1 C. firmly packed brown sugar
1 egg
3/4 C. buttermilk
2 tsp. baking soda
2 C. flour
1 tsp. ground cinnamon
1 tsp. ground nutmeg
1 tsp. ground allspice
1/2 tsp. ground cloves
1 C. apple butter
1/2 C. chopped pecans
Cream butter and brown sugar; add egg to mixture, and beat well. Mix together buttermilk and baking soda. Mix together flour and spices; add to creamed mixture alternately with buttermilk mixture, beginning and ending with flour. Stir in apple butter and chopped pecans.
Pour into greased 9 x 5 x 3-in. bread loaf pan. Bake at 350 degrees F for 1 hr. and 5 min. or until a wooden pick inserted in center comes out clean.
Cool in pan 5 min.; remove to wire rack, and cool completely.
Yield: 1 loaf (9 servings).
