3/4 C. canned pumpkin
6 Tbsp. canola oil
1 egg
2 egg whites
1 Tbsp. light molasses
2 tsp. vanilla
1 1/4 C. flour
1 C. Sugar replacement
1/2 C. raisins
1 Tbsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 tsp. ground ginger
1/4 tsp. salt
*May substitute 24 packets Sugar replacement
Mix together pumpkin, oil, egg and egg whites, molasses and vanilla. Stir in Mix togetherd flour, Sugar replacement, raisins, baking powder, cinnamon, nutmeg, ginger and salt just until all ingredients are moistened. Fill paper lined 2 1/2 in. muffin C. about 3/4 full.
Bake in preheated 375 degree F oven 18 to 20 min. or until wooden pick inserted in center comes out clean. Cool in pan on wire rack 2 to 3 min. Remove muffins from pan and cool completely on wire rack.
