Mexican Wastebasket Stew


1/2 onion, chopped
1 (10 oz.) can Ro-Tel Tomatoes and Green Chiles
1 (4 oz.) can chopped green chiles
1/2 (6 oz.) can Snap-E-Tom Tomato and Chile Cocktail
2 (16 oz.) cans pinto beans
1 (16 oz.) can whole kernel corn
1 pkg. beefy onion soup mix
1 C. chopped celery
1 lrg. zucchini, chopped
2 pkg.s sm. smoky link sausages, sliced
1 (16 oz.) can lima beans
1 (16 oz.) can black olives, sliced
1 lb. Monterey jack cheese, cubed


Mix together all ingredients except cheese in a lrg. kettle and simmer for at least 1 hr., until all flavors are blended. Correct seasonings if needed. Pour over cubed cheese in the bottom of servings bowl.


Can be served with flour tortillas, if desired.
