Soups for Salads :: Soups for the Crock Pot
1/2 lb. lean, boneless pork loin, cut into thin strips
1/4 lb. sliced mushrooms (about 7 whole)
8 oz. canned water chestnuts, canned, drained and sliced
1/2 C. bamboo shoots, cut into strips
2 Tbsp. rice wine vinegar
2 Tbsp. light soy sauce
1 tsp. sesame oil
1/4 tsp. red pepper flakes
1 C. firm tofu, cubed
2 C. chicken broth
2 C. water sliced green onions (for garnish)
In crockpot, Mix together all ingredients except green onions. Cover; cook on LOW for 7 to 8 hr..
Ladle into individual bowls. Garnish with green onion slices.
Makes approximately 7 to 8 servings.
