Soups for Salads :: Soups for the Crock Pot
1 1/2 lb. boneless pork shoulder or beef
stew meat, cut into 1 1/2-in. cubes
1 (28 oz.) can whole tomatoes, cut into lrg. pieces
1/2 C. beef consomm (or whole can)
2 Tbsp. lemon juice
1 med. garlic clove, crushed
1 (7 oz.) can whole green chiles, cut into thin strips
1 tsp. ground cumin
1/4 tsp. ground cloves
1/4 tsp. sugar
1/3 C. chopped parsley
Salt, to taste
Brown meat in oil. Drain grease. Add tomatoes, the liquid, consomm, lemon juice, garlic, sugar, cumin, cloves, chiles, parsley and salt. Bring to boil.
Place mixture in 3 1/2-qt. crockpot. Cook on LOW for 6 to 8 hr..
Serve in soup bowls or over rice on tortillas.
Makes approximately 6 servings.
