1 onion, chopped
1 sweet red bell pepper, chopped
1 garlic clove, minced
1 Tbsp. extra virgin olive oil
1 (4 oz.) can green chiles, diced
7 tomatillos, chopped
2 lb. pork, fat trimmed and cubed
2 tsp. dried oregano
2 tsp. dried sage
1 tsp. dried cumin
1 tsp. red pepper flakes
1 tsp. dried cilantro
1/2 C. beer
Saut onion, red pepper and garlic in extra virgin olive oil. Place all ingredients in crockpot and cook on LOW for 8 hr..
Make burritos or use as a dip.
