Soups for Salads :: Soups for the Crock Pot
1 lb. beef stew meat, cut into 1/2-in. cubes
1/2 C. chopped finely onion
1 clove garlic, minced
1 (10 1/2 oz.) can condensed beef broth
1/2 C. water
1/2 C. pearl barley
2 Tbsp. catsup
1 tsp. paprika
1 tsp. salt
Dash of pepper
2 C. sliced fresh mushrooms
1/2 C. sour cream
Mix all ingredients except the sour cream in a 4-qt. crockpot. Cover and cook on LOW for 7 to 8 hr.. Turn off heat then stir in sour cream.
Serve over egg noodles.
