Soups for Salads :: Soups for the Crock Pot
2 lb. stew meat
3 Tbsp. canola oil
1 onion, sliced
1/2 C. chopped green bell pepper
1 lrg. clove garlic, minced
1/2 tsp. salt
1/8 tsp. pepper
2 C. beef stock
1 (16 oz.) can tomatoes
1 (4 oz.) can mushrooms
1/3 C. barbecue sauce
3 Tbsp. cornstarch
1/4 C. cold water
Saute onion, pepper and garlic in oil. Add salt, pepper, beef stock, tomatoes, mushrooms and barbecue sauce. Add to crockpot and cook on LOW for 8 to 10 hr..
Mix cornstarch and cold water and thicken before servings.
Serve over hot cooked rice.
