1 C. chopped finely red onions
2 cloves garlic, minced
2 Tbsp. extra virgin olive oil or canola oil
1/3 C. red wine vinegar
1/4 C. chopped red pepper
1/4 C. chopped green bell pepper
2 Tbsp. minced parsley
2 Tbsp. Equal Spoonful*
1/4 tsp. salt
1/4 tsp. pepper
1 can (15 oz.) great northern beans, rinsed, drained
1 can (15 oz.) black beans, rinsed, drained
Red and green bell pepper rings
*May substitute 3 packets Equal sweetener
Saute onions and garlic in oil until crisp tender in med. skillet; remove from heat and cool until warm.
Stir vinegar, peppers, parsley, Equal , salt and pepper into onions.
Pour onion mixture over Mix togetherd beans in a bowl; mix well. Garnish with pepper rings.
