Sweet Potato Pie

Pastry for single-crust 9-in. pie
2 C. cooked, mashed sweet potatoes (about 2 lb.)
2 eggs, lightly beaten
1 C. Sugar replacement
1 Tbsp. flour
1 tsp. lemon juice
1 tsp. vanilla extract or flavoring
1/2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 tsp. salt
1 can (12 oz.) evaporated fat-free milk


*May substitute 24 packets Sugar replacement


Roll pastry on a lightly floured surface into a circle 1 in. lrg.r than inverted 9-in. pan. Ease pastry into pan; trim and flute edge.


Mix sweet potatoes with electric mixer in lrg. bowl until smooth. Stir in eggs, Sugar replacement flour, lemon juice, vanilla, spices, salt and evaporated milk. Pour mixture into pastry shell. Bake in preheated 400 degree F oven 40 to 45 min. or until filling is set and sharp knife inserted near center comes out clean.


Cool completely on wire rack. Refrigerate until servings time.
