10% calorie reduction from traditional recipe
2 tsp. extra virgin olive oil
1 C. diced red bell pepper
1/2 C. sliced green onions
2 Tbsp. curry powder
3 C. hot cooked rice
1/4 C. Sugar replacement
2 Tbsp. lime juice
1/2 tsp. salt
1 can (20 oz.) pineapple chunks, drained
1 can (15 oz.) black beans, rinsed, drained
1/2 C. salted cashews
*May substitute 6 packets Sugar replacement
Heat extra virgin olive oil in med. skillet. Cook and stir bell pepper and onions 2 to 3 min. Add curry powder and stir 30 seconds.
Mix together rice, Sugar replacement, lime juice and salt in med. size bowl. Stir in cooked vegetable mixture. Rice can be served warm or at room temperature. Sprinkle with cashews just before servings.
