1 C. chopped zucchini
1 lrg. tomato, chopped (1 C.)
1/3 C. grated Parmesan cheese
1/2 C. reduced fat Bisquick
1 C. fat-free milk
1/2 C. Egg Beaters
Salt and pepper to taste
Heat oven to 400 degrees F. Grease 9-in. pie plate.
Layer zucchini, tomato, onion and cheese in pie plate.
Stir remaining ingredients until blended, then pour out into pie plate. Bake about 35 min. or until knife inserted in center comes out clean. Cool 5 min.
