Cran-Apple Oatmeal


20% calorie reduction from traditional recipe


2 C. fat-free or 2% milk
1/3 C. dried cranberries
1/2 tsp. ground cinnamon
1/4 tsp. salt
1 C. old-fashioned or quick oats, uncooked
3/4 C. chopped apple
2 Tbsp. Sugar replacement
2 Tbsp. chopped pecans (optional)
1/2 tsp. vanilla


*May substitute 3 packets Sugar replacement


Mix together milk, cranberries, cinnamon and salt in med. saucepan. Bring to boil over med. heat, stirring occasionally. Add oats and apple. Simmer, uncovered, 5 to 6 min. for old-fashioned oats OR 1 to 2 min. for quick oats, stirring occasionally until most of liquid has been absorbed. Remove from heat. Stir in Sugar replacement, nuts and vanilla.


Makes approximately 2 servings
