Quick Meals- Salads and Sandwiches :: Seafood Sandwiches
1 (14-in.) loaf Italian bread
3/4 lb. cleaned diced shrimp
3/4 C. bottles salsa
2 avocados, sliced
6 oz. shredded Monterey jack cheese
Split bread loaf in half lengthwise. Saut shrimp in med.-size skillet with salsa for about 4 min. Layer avocados on bread halves, dividing evenly. Spoon shrimp on avocado. Top with cheese. Broil 2 to 3 min. or until cheese melts. Cut each half in half.
Makes approximately 4 servings.
