1/2 C. margarine
4 eggs
1/2 C. Monterey jack cheese, grated
1/4 tsp. salt
1 C. yellow cornmeal
1/2 to 1 C. sugar, to taste
1 (16 oz.) can cream-style corn
1/2 C. Colby cheese, grated
1 C. flour
4 tsp. baking powder
Butter a 12 x 8-in. pan and dust with flour.
Cream margarine and sugar together. Add eggs, creamed corn, cheeses and salt; mix well.
Sift flour, yellow corn meal and baking powder together. Mix together this with corn-cheese mixture, not over-mixing. Pour into pan. Bake 45 min. to 1 hr. at 300 degrees F.
