Hawaiian Oatmeal Bread


4 eggs
1 1/2 C. sugar
2 1/2 C. flour
2 tsp. salt
2 tsp. baking soda
1 1/2 C. quick oats
1 (20 oz.) can crushed pineapple, undrained
3 C. (10 oz.) flaked coconut


Mix together eggs and sugar and beat until light (about 2 min.). Sift flour, salt and soda. Add to egg mixture and blend until smooth (about 2 min. longer). Add remaining ingredients and mix very well. Spoon into two greased and floured 9 x 5-in. bread loaf pans. Bake at 325 degrees F for one hr..


Remove from pans immediately and serve warm or cold.
