Hawaiian Bread


2 C. sugar
3 C. flour
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1 C. chopped pecans
3 eggs, beaten
1 C. canola oil
1/2 C. water
2 C. mashed ripe banana
1 C. crushed pineapple with juice
2 tsp. vanilla extract or flavoring


Sift sugar, flour, salt, baking soda and  cinnamon; add nuts. Reserve.

Beat eggs in lrg. mixing bowl. Add remaining ingredients. Mix slightly with wooden spoon. Add dry ingredients, stirring just until batter is moistened. Pour into two greased and floured bread loaf pans. Bake at 350 degrees F for 1 hr. and 5 min., or until done.


Cool for 10 min. Remove from pans.
