Quick Meals- Soups and Bread :: Savory Quick Breads
3 C. flour
1/4 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 C. sugar
1 Tbsp. cinnamon
2 lrg. eggs, lightly beaten
1 C. canola oil
1 tsp. vanilla extract or flavoring
2 C. chopped finely or ground
green tomatoes - about 2 med.
1 1/2 C. chopped pecans
Preheat oven to 350 degrees F. Grease and flour two 8 x 4-in. bread loaf pans.
Mix together first 6 ingredients in a lrg. bowl; make a well in center of mixture.
Mix together eggs, oil and vanilla extract or flavoring; stir well. Add to dry ingredients, stirring just until moistened. Fold in tomato and pecans.
Spoon batter into prepared bread loaf pans. Bake for 1 hr. or until a wooden pick inserted in center of bread comes out clean. Cool in pans on a wire rack for 10 min.
Remove from pans, and let cool completely on wire rack.
