Quick Meals- Soups and Bread :: Savory Quick Breads
6 Tbsp. butter or butter replacement (or meat drippings)
6 eggs
2 C. milk
2 C. flour
1 tsp. salt
In a sm. saucepan over low heat, melt butter or butter replacement. Grease well eight deep custard C. (or use the special lrg. popover pan available at kitchen shops). If you use custard C., set them in a jellyroll pan for easier handling.
Preheat oven to 375 degrees F.
In a lrg. bowl, with mixer at low speed, beat eggs until frothy; beat in milk and butter until blended. Beat in flour and salt until batter is smooth. Fill each custard C. three-qt.ers full with batter. Bake 1 hr.; then quickly make a sm. slit in the top of each popover to let out steam. Bake 10 min. longer. Immediately remove popovers from C..
Serve piping hot. Makes approximately 8 popovers. This is wonderful served with prime rib.
