Down Home Corn Bread

Yield: 8 servings


1 1/2 C. yellow or white cornmeal
1/2 C. flour
4 tsp. baking powder
1/2 tsp. salt
10 strips bacon, cooked and diced *
1/3 C. melted shortening
2 eggs
1 1/4 C. milk


Preheat oven to 425 degrees F.


Mix together cornmeal, flour, baking powder and salt in lrg. bowl.


In a sm. bowl, mix together bacon, shortening, eggs and milk. Add egg mixture to dry ingredients and mix until just smooth, pour batter into hot, greased skillet and bake 18 to 20 min., until golden brown. Cut into wedges.
