Cheesy Onion Cornbread


1 lrg. Spanish onion
2 Tbsp. butter or butter replacement
1 1/2 C. cornbread mix
1 (8 oz.) can cream-style corn
1/3 C. milk
1 egg, beaten
1 C. (4 oz.) shredded sharp Cheddar cheese
3 oz. finely diced pepperoni (optional)
1 C. sour cream
1/4 tsp. salt


Slice onion into thin rings.


Melt butter in sm. skillet. Add onion. Saut over med. heat about 10 min. or until transparent. Set aside to cool.


Preheat oven to 425 degrees F.


Mix together corn bread mix, corn, milk, egg and Tabasco sauce in a lrg. bowl. Stir in 1/2 C. cheese and pepperoni, if desired. Pour into a greased 8-in. square baking pan.


Mix together sour cream, salt, onion and 1/4 C. cheese. Mix well. Spread in an even layer over batter in pan. Sprinkle with remaining cheese. Bake 30 min. or until golden brown. Remove to wire rack. Let stand 10 min. before cutting into squares.
