Bacon and Onion Bread


5 or 6 strips bacon
1 sm. onion, chopped
2 C. flour
1 Tbsp. baking powder
1 Tbsp. sugar
1/4 tsp. salt
1/8 tsp. black pepper
1/8 tsp. cayenne
2 lrg. eggs
1 C. sour cream
1/4 C. butter, melted


Preheat oven to 350 degrees F. grease a 9-in. bread loaf pan.


Cook bacon in skilled until crisp. Drain on towels, then dice coarsely. Remove all but 2 Tbsp. of fat. Add onion and cook for 2 min. or until tender.


Mix flour, baking powder sugar, salt, pepper and cayenne in lrg. bowl.


Whisk eggs, sour cream and butter until blended; stir in bacon and onion. Pour liquid mix over dry ingredients and fold in just until Mix togetherd. Do Not overmix.


Spoon into prepared bread loaf pan and bake for 50 min. or until it tests done. Cool in pan for 10 to 15 min., then remove to rack to cool completely.
