Quick Meals- Salad and Quiche :: Quiche
1 1/2 C. whipping cream
1/2 C. buttermilk
4 eggs, lightly beaten
1/4 tsp. salt
Dash of pepper
1/4 lb. bacon, cooked and crumbled
1/4 lb. Swiss cheese, shredded (2 C.)
2 Tbsp. sliced scallions
1 (6 oz.) can Lindsay Lrg. Pitted, Ripe Olives, drained
1 pastry-lined 9-in. pie plate or quiche dish (unbaked)
Preheat oven to 375 degrees F.
Heat cream and buttermilk; whisk in eggs and seasonings. Stir in cheese, bacon, onions and Lindsay Olives. Pour into pastry shell. Bake for 30 to 35 min., until custard is set and golden.
Garnish with chopped parsley, if desired.
Makes approximately 6 servings.
