Quick Meals- Salad and Quiche :: Quiche
1 Tbsp. butter
1 Tbsp. flour
3/4 C. heavy cream
Salt and pepper to taste
Pin. of nutmeg
1 lb. pasta
2 cloves garlic minced
2 Tbsp. extra virgin olive oil
2 zucchini, sliced thin
1 lb. cooked turkey, cubed
Grated Parmesan or Romano cheese
Prepare the roux by heating the butter in a sm. sauce pan over med. heat. Add the flour and stir until it is light brown. In another pan, heat the cream. When it is hot, add the roux and stir until thickened. Add the seasonings and remove from heat. At this point, cook your pasta according to directions. Saute the garlic in the oil until light brown. Add the zucchini and turkey and saut until hot. Add more seasoning, if needed. Toss the turkey and zucchini into cooked hot pasta, and add the cream sauce. Top with grated cheese.
