Yield: 4 servings
4 chicken breast halves, skinned, boned and patted dry
3/4 C. buttermilk
3 Tbsp. Parmesan cheese
1/2 C. dry bread crumbs
1/2 tsp. rosemary
1/2 tsp. thyme
1/4 tsp. garlic powder
1/4 tsp. onion powder
1/4 tsp. black pepper
Cover a baking sheet with foil and lightly coat with nonstick cooking spray. In a shallow dish Mix together all ingredients except chicken and buttermilk.
In a separate dish, dip chicken in buttermilk then roll in dry mixture and place on baking sheet. Bake at 400 degrees F for 35 to 40 min. until golden.
