Low-Fat and Low-Calorie Recipes :: Poultry Recipes
1 (8 oz.) pkg. cheese-filled tortellini
1 1/2 C. cut-up cooked chicken or turkey (about 8 oz.)
1/3 C. dry white wine or 1/3 C. chicken broth
2 Tbsp. olive or canola oil
2 Tbsp. lemon juice
1 Tbsp. chopped fresh tarragon or 1 tsp. dried tarragon leaves
1 tsp. sugar
1/2 tsp. salt
1/4 tsp. pepper
3 C. bite-size pieces of salad greens (spinach, leaf lettuce, romaine)
1 sm. red or green bell pepper, cut into 1/2-in. pieces
Cook tortellini as directed on pkg.; drain. Rinse with cold water; drain.
Mix tortellini and chicken in lrg. bowl.
Shake wine, oil, lemon juice, tarragon, sugar, salt and pepper in tightly covered container. Stir into tortellini mixture. Cover and refrigerate at least 2 hr..
Toss tortellini mixture with salad greens and bell pepper just before servings.
Servings 4 with 6 WW points per servings.
