2 pkg.s frozen broccoli spears
6 boneless skinless chicken breasts
1 C. plain nonfat yogurt
1 can cream of chicken soup
1/2 tsp. curry powder
2 Tbsp. grated Cheddar cheese
1/2 C. soft bread crumbs
Heat oven to 350 degrees F.
Steam broccoli until tender (about 2 min.). Spray a 9 x 13-in. baking dish with nonstick spray. Drain broccoli and place in the bottom of the baking dish.
Boil chicken until done. Cut or shred into bite-size pieces. Add to broccoli.
Mix together the yogurt with the soup and curry powder. Pour over the chicken and broccoli. Sprinkle the cheese on top. Top with the bread crumbs. Bake for 30 min.
Yield: 4 servings
