Super Salad Recipes :: Potato Salads
2 lb. sm. red potatoes
1 C. prepared Ranch dressing
Chopped chives
1/2 C. sliced scallions
Paprika
Coarsely-ground black pepper
Boil potatoes with skin on. Cut slightly-cooled potatoes into slices or cubes.
In lrg. bowl, Mix together potatoes, onions and dressing. Toss gently. Dust with paprika and pepper. Garnish with chives.
Serve warm or at room temperature.
