Roasted Pork Tenderloin with Pineapple-Chipotle Sauce


2 C. pineapple juice
1/2 C. white wine vinegar
2 Tbsp. chipotle chiles, chopped finely
2 Tbsp. lime juice
2 Tbsp. fresh oregano, chopped, or 2 tsp. dried
Freshly ground black pepper, to taste
2 tsp. kosher salt
1 Tbsp. coarsely ground black pepper
2 Tbsp. chili powder
24 oz. pork tenderloin
1 tsp. extra virgin olive oil


Mix together first 3 ingredients in saucepan. Simmer until mixture is thick enough to coat back of spoon (30 to 40 min.) stirring often. Remove from heat and add lime juice, oregano and pepper to taste.


Preheat oven to 400 degrees F.


In sm. bowl Mix together salt, pepper and chili powder. Rub tenderloins with mixture.


Heat oil in saut pan until hot. Brown tenderloins. Transfer pan to oven and roast meat until internal temperature reaches 160 degrees F (about 12 min.). Remove from oven, allow to rest for 5 min.


Carve and serve with sauce.
