Pulled Pork Barbecue

1 whole pork tenderloin, (about 1 lb.), all fat trimmed
1 tsp. chili powder
1/2 tsp. garlic powder
Vegetable cooking spray
1/2 C. chopped finely onion
1 1/2 tsp. minced garlic
1 can (15 oz.) crushed tomatoes, undrained
1 Tbsp. cider vinegar
1 Tbsp. prepared mustard
1 to 2 tsp. chili powder
1/4 tsp. maple extract or flavoring
1/4 tsp. liquid smoke
1/3 C. Sugar replacement
Salt and pepper
6 multigrain hamburger buns, toasted


*May substitute 8 packets Sugar replacement


Rub pork with 1 tsp. chili powder and garlic powder; place in baking pan. Bake in preheated 425 degree F oven until pork is well browned and juices run clear, 30 to 40 min. Let stand 10-15 min. Cut into 2- to 3-in. slices; shred slices into bite-size pieces with fork.


Spray med. saucepan with cooking spray; heat over med. heat until hot. Saut onion and garlic until tender; about 5 min. Add tomatoes, vinegar, mustard, chili powder, maple extract or flavoring and liquid smoke to saucepan; heat to boiling. Reduce heat and simmer, uncovered, until med. sauce consistency, 10 to 15 min. Stir in Sugar replacement. Season to taste with salt and pepper. Stir pork into sauce; cook until hot, 2 to 3 min. Spoon mixture into buns.
