Lemon Pork Scaloppini


1 lb. pork tenderloin
3 Tbsp. flour
1/4 tsp. salt
1/4 tsp. pepper
Vegetable cooking spray
2 tsp. extra virgin olive oil, divided
3 Tbsp. lemon juice
2 Tbsp. water
1 tsp. capers
1/4 C. fresh parsley, minced


Trim fat from tenderloin. Cut tenderloin into 1/2 in. thick slices; place slices between 2 sheets of heavy-duty plastic wrap and lb. to 1/4 in. thickness, using a meat mallet or rolling pin.


Mix together flour, salt and pepper in a lrg. heavy-duty, zip-top plastic bag, add pork slices. Seal bag, and shake until pork is coated.


Coat a lrg. nonstick skillet with cooking spray and add 1 tsp. oil. Place over med.-high heat until hot. Add half of pork slices; cook 2 min. on each side or until browned. Transfer to a servings plate, keep warm. Repeat procedure with remaining 1 tsp. oil and pork slices. Remove skillet from heat.


Add lemon juice, water and capers to skillet, bring just to a boil. Pour mixture over pork slices, sprinkle with parsley.
