Low-Fat and Low-Calorie Recipes :: Pork Recipes
1 lrg. onion
1 jalapeno pepper, minced
2 lb. pork loin, cut into 2-in. cubes
1 Tbsp. chili powder
2 tsp. cumin
1/2 tsp. coriander
1/2 tsp. thyme
1/2 tsp. oregano
1/4 tsp. cloves
Pin. allspice
3 cloves garlic, minced
2 Tbsp. tomato paste
2 C. beef broth
2 C. chicken broth
2 bay leaves
1/4 C. cilantro
Cook onion and jalapeno in water until soft. Add pork and stir until brown.
Mix in chili powder and next 6 ingredients and cook 2 min. Add garlic and tomato paste and cook 3 min. Stir in all remaining ingredients except cilantro. Reduce heat, cover and simmer 1 hr..
Uncover and simmer until pork is tender and shreds easily, about 1 hr.. Remove pork from liquid using slotted spoon.
Increase heat to med. and boil cooking liquid until reduced to 1/2 C., about 35 min. Shred pork and mix in sauce.
