2 1/2 to 3 lb. pork boneless sirloin roast
\n1 Tbsp. canola oil
\n3/4 C. dry white wine
\n2 Tbsp. flour
\n1 tsp. salt
\n1/2 tsp. pepper
\n2 med. carrots, chopped finely or shredded
\n1 med. onion, chopped finely (1/2 C.)
\n1 sm. shallot, chopped finely (2 Tbsp.)
\n1/4 C. half-and-half
\n2 to 3 Tbsp. country-style Dijon mustard
Trim excess fat from pork.
\nHeat oil in 10-in. skillet over med.-high heat. Cook \npork in oil about 10 min., turning occasionally, until brown on all sides.
\nPlace pork in 3 1/2- to 6-qt. crock pot.
\nMix remaining ingredients except \nhalf-and-half and mustard; pour over pork.
\nCover and cook on LOW for 7 to 9 hr.. or until pork is tender.
\nRemove pork from crock pot; \ncover and keep warm. Skim fat from pork juices in cooker, if desired. Stir \nhalf-and-half and mustard into juices.
\nCover and cook on HIGH about 15 min. or until slightly thickened. Serve sauce \nwith pork.
