2 (3/4 lb.) pork tenderloins
1/2 C. low-sodium soy sauce
1/4 C. unsweetened orange juice
1/4 C. unsweetened pineapple juice
2 Tbsp. brown sugar
1 Tbsp. peeled, grated gingerroot
2 cloves garlic, minced
Cooking spray
Place pork in a lrg. heavy-duty, zip-top baggie.
Mix together soy sauce and next 5 ingredients. Pour over pork. Seal bag; marinate in refrigerator for 8 hr. or overnight, turning bag occasionally.
Remove pork from marinade, discarding marinade.
Coat grill rack with cooking spray; place on grill over med.-hot coals (350 to 400 degrees F.) Place pork on rack; grill, covered, 25-30 min. or until meat thermometer inserted in thickest portion of pork registers 160 degrees F, turning occasionally.
Makes approximately 6 servings.
