Creamy Chicken and Penne

Makes approximately 6 servings


1 lb. penne pasta
4 C. broccoli florets
1 onion, sliced
1 Tbsp. extra virgin olive oil
1/2 lb. boneless, skinless chicken breasts,
    cut in 3 x 1-in. strips
3/4 C. sun dried tomatoes in oil, drained and
    chopped finely
1 C. heavy cream
1/2 C. chicken broth
2 Tbsp. balsamic vinegar
1 tsp. salt
1/4 tsp. black pepper
3/4 C. Parmesan cheese

Cook pasta according to pkg. directions. Stir in broccoli during last 2 min. of cooking.


Saut onion in extra virgin olive oil until softened.


Add chicken and saut.


Stir in sun dried tomatoes, cream, broth, vinegar, salt and pepper. Simmer about 4 min.


Drain pasta and broccoli, toss with chicken mixture and parmesan cheese.
